T.E.A.
A bit of history as a starter. In the 16th Century, Portugal became the first European country to create commercial routes to China to establish the tea trade.
In 1661, the Portuguese Princess Catarina de Bragança (Catherine of Braganza) married King Charles II of England and had to move up north to join the king. It was known at the time that the young queen-to-be was very fond of tea and was sipping on a daily basis. She even packed loose-leaf tea on her trip that which is believed to have been part of her dowry. A legend has it that the crates were marked Transporte de Ervas Aromáticas (Transport of Aromatic Herbs) which was later abbreviated to T.E.A. When Queen Catherine arrived in England, tea was being consumed as a medicine. However, the young queen continued her daily tea drinking habit, making tea a popular social beverage and installing the famous British tradition of having tea at five o’clock in the afternoon sharp. We try to keep the tradition every other day, no matter what time it is.

BLACK
Black teas are made by picking the tea leaves then rolling and drying them.
The leaves are slightly bruised which causes them to become ‘oxidized’, as leaves start to ferment. The leaves become darker in color and causes the resulting brew to have that delicious, strong flavor and more of a caffeine kick than other teas. Thus, strong enough to take milk and sugar. Enjoy!

ROIBOOS AND TISANES
While we tend to call anything we brew with hot water a ‘tea’, technically speaking, only the products of the Camellia Sinesis plant are teas.
Other plants and herbs commonly brew with hot water like chamomile, mint and Rooibos are not actually ‘teas’ because, well, they do not come from the tea plant. Thus, the correct term would be an ‘infusion’ or a ’tisane’.
